CrossFit and Power Bars

Now that Dad's into Crossfit and trying to act younger than he is (what else is new), he needs a little nourishment to keep him going after a workout. So, thanks to Tyler Cooper at Roadcycler.com, he has adapted his powerbar recipe and made his own even healthier version with a little more detail below. It's simple and easy and can be cooling in the refrigerator in 30 minutes.

100g 80% Organic Dark Chocolate
1 cup Natural Peanut Butter
1 cup Pure New Zealand Honey (slight influence here)
3 cups Organic Regular Rolled Oats
handfuls of raisins, sunflower seeds, dried cranberries or any other seeds/nuts to taste

  1. Break the chocolate into small pieces.
  2. Mix the peanut butter and honey over medium heat until runny.
  3. Roll the rolled oats, raisins and other seeds and nuts into the peanut butter and honey mixture.
  4. Remove from heat and let it cool for 2 minutes.
  5. Mix chocolate in thoroughly.
  6. Press into 9" x 13" pan and place in refrigerator.
  7. When completely cool (1-2 hours) cut into desired bar size. Makes 15-25 bars.

Enjoy.
